Lenoir County restaurant inspections
The following inspections were conducted by the Lenoir County Health Department:
Golden China Buffet
4147 W Vernon Avenue, Kinston

Observations:
Establishment did not have written procedures for vomit & diarrheal clean up.
Employees (wait staff) seeing clearing dirty plates, bowls, and cups from customers and then proceeded to handle bundles of clean utensils and make customer drinks without washing hands. Food employees shall clean their hands and exposed portions of their arms after handling soiled equipment, dishes, or utensils and other points of contamination listed under 2-301.14 under NC Food Code.
Employees washed hands but did not use the correct method of handwashing by turning off the faucet (nozzles) using the single use towels. Employees used washed hands to turn off the nozzles. Washed hands may be re-contaminated if used to handle the nozzles to turn off the faucet.
Condiments at buffet are not labeled.
Employees handling clean equipment and dishes today wearing bracelets.
Knife seen stored in between prep table and lift top cooler. All in use utensils shall be stored on or in a clean, sanitized surface; in water at least 135 degrees F; in a dipper well; or in the food, handle up.
Bowls stored food contact surface up at buffet. Store all dishes, (bowls, plates, cups, pans, etc.) food contact surface down, inverted, to prevent contamination of food contact area.
Pepsi cooler is not approved to cold hold cooked, unpackaged TCS foods.
Walk in freezer door in poor repair. Door is bent and ice is freezing around the door.
Bulk ice machine (one used for cooling foods) has a hole in the back of the machine near the ice chute. Replace chipping cutting board (beside Pepsi cooler).
Clean inside and in between fryers to remove accumulated grease and food debris build up.
Detailed floor cleaning under all equipment and shelving in walk in coolers and freezer.
Floor in walk in cooler #1 in poor repair (stainless steel is peeling up).
Damp mops stored directly on the floor with brooms and other floor equipment. After use, mops shall be placed in a position that allows them to air dry without soiling walls, equipment, or supplies.

7 bottles of expired, sour and soiled milk found in biscuit reach-in-cooler.
3 door reach-in-fridge observed to have drips from the unit.
Better and more frequent cleaning is needed on the refrigerator handles and edges, handwash sinks, the refrigerated drawers, lifttop unit at sandwich station, the BIG Bo hot hold cabinet, the shelving in the WICs, lower shelving and any other surfaces where grease, dust, hand contamination occurs.

Employee washes hands but touches faucet handle with bare hands to cut off faucet before drying hands.
Few foods cooling in thick layers, covered, or both in walk-in refrigerator and lift-top
Raw meats in display unit on right, facing front door range from 41f on the right side to 48f on the left side over a span of about an hour.
Deli meats in display case in line with cash register are dated for 14 days.
Foods that are cooling are in thick layers, in covered, plastic containers, or portioned hot and stacked.
Shelving for air-drying and clean utensil storage is rusty.
Temperature of wash water when washing utensils is 105f. The temperature of detergent water during washing utensils shall be 110f or above.
Leak in pipe under handwash sink. Staff worked on but repair still needed.
Dumpster lid is open. Liquid running out of dumpster on concrete pad.
Floor in walk-in shows wear. Floor in kitchen and walk-in is no longer easily cleanable.
Some lights over butcher table are out.

Handle (food contact portion) on meat slicer stored across from 3 compartment sink is chipping.
Clean inside of reach in cooler beside ice machine. Clean pans inside of small front line cooler holding whipped topping and other packaged food items. Clean shelving under prep table across from 3 compartment sink.
Discard items and litter stored in the waste areas and enclosures as they are not necessary to operation and maintenance. Remove old front line cooler from dumpster area.
Repair broken tiles (baseboard) on small wall by double ovens.
Handy Mart

Person in charge does not have food safety manager certification.
Provide at least 100F water at handsinks. Hot water at handwashing sinks in prep area ranged from 73-78 degrees. Hot water in restrooms ranged from 89-92 degrees F.
Chili and bologna was not initially reheated to 135 degrees F for holding. Commercially processed foods shall be reheated to 135 degrees F for holding. Chili was reheated on the stove to 157 degrees F.
Several hot holding TCS foods were not being maintained at 135 degrees F or above in hot holding unit.
The following ready to eat, TCS foods were not dated today: opened package of mozzarella cheese, opened package of cheddar cheese, opened package of beef tenderloins, and chicken salad (made in-house).
Live and dead flies present in establishment today.
Replace torn gasket on biscuit prep cooler.
Clean sides of fryers, stove, inside of fryers, inside of small biscuit cooler, inside of hot holding unit, and shelving near biscuit prep area where accumulated flour is present.
Drain field for on site waste water system is not being maintained. Grass and other foliage is very high. Area where on site system is located shall be maintained and operated according to law. Keep area maintained.
Lids are broke on outside dumpster.
Dumpster area needs to be cleaned. Accumulated leaves, debris, and grease seen in area today.
Filters in air vents in ceiling by hot holding unit/steam well are very dusty. Clean and replace filters in this area. Clean fan that has accumulated dust and flour on cover and fan blades.
