Lenoir County restaurant inspections
The following restaurant inspections were conducted by the Lenoir County Helath Department:
McDonald's
110 W Vernon Avenue, Kinston

Observations:
Egg patties 45 degrees F; shell egg 44 degrees F; shredded cheese 44 degrees F. All cold holding TCS foods shall be held at 41 degrees F or below.
Two wet wiping cloths seen out of buckets of sanitizer. All wet wiping cloths shall be held in buckets of sanitizer at its correct concentration in between uses.
Clean trays holding sandwich and biscuit wrappers to remove accumulated food debris. Clean beverage areas for both coffee, soda, and milkshake products to remove splatter and accumulated food debris. Single service articles in these areas are dirty and sticky due to food debris and splatter.
Repair door on reach in freezer where chicken products are being stored. Door is not making a tight seal, causing a gap at the top of the door, increasing the freezer temperature.
Clean all gaskets on all coolers and freezers to remove accumulated food debris. Defrost and clean reach in freezer where French fries are stored to remove ice build up and food debris. Detail cleaning needed in all beverage areas; splatter from beverages was seen on equipment and other areas in these locations. Detail cleaning needed in drive through area, including those containers holding sauce and jelly packets.
Floor cleaning needed at drive through area; several single service items seen that were dropped in this area. Floor cleaning needed at coffee beverage areas and soda areas at front counter where spills have occurred.

Air dry equipment and utensils after cleaning and sanitizing. Black plastic pans and individual portion silicone trays are stored wet.
The hot water in the facility is not sufficient. At the 3 comp sink, 99 degrees F. At the food prep 96. Lavatories are not up to required temperature.
The wall behind the hanging drying racks visibly soiled. More thorough cleaning needed. The ceiling tiles over the J3 comp sink are not washable.

Handwashing sink at front counter area is being used as a drink dumping sink. Handwashing sink shall be used for handwashing only. Sink contained drink residue and build up. Thoroughly clean handwashing sink and use for handwashing only.
Need a splash guard (washable, nonabsorbent surface) in between prep sink and drainboard of three compartment sink.
Clean floor in storage room in back corner area where spill occurred. Clean floor in walk in cooler (remove cabinet and clean floor under it).
Provide required lighting intensity. Need more lighting over prep table with microwave. Lighting in this area is 14-29 ft candles; need at least 50 ft candles of lighting in food prep areas. Need more lighting over 3 compartment sink. Lighting in this area is 9 - 16 ft candles over 2nd and 3rd sinks of dishwashing area; need at least 20 ft candles of lighting in dishwashing areas.

Shell eggs stored in a basket above main cook line had an initial placement time of 5 am and a discard time of 9 am. Time has expired for shell eggs.
Uncovered Head of lettuce in a container seen stored in glass door cooler at the end of the main prep line. All foods shall be kept covered during storage to prevent contamination.
Wet wiping cloths seen stored in various areas throughout establishment. Few wet wiping cloths were not seen fully submerged in sanitizer. All wet wiping cloths shall be completely submerged in sanitizer at its correct concentration between uses.
Ice scoop hanging on a hook on wall beside ice machine is touching ice machine vents. Store all utensils under grill area in the same direction to prevent contamination of food contact surface area.
Repair ice machine baffle/shield where screws are loose. Screws can potentially fall into ice and create a physical hazard. Repair glass door on cooler at the end of the prep line; door is not making a secure, tight fitting close. Repair cooler near 3 compartment sink that is not working.
Clean all floor drains and mop wash basin; Areas contain large amounts of accumulated food debris.
Pizza Hut

Observations:
Clean dishes, opened single service, and food items stored on dirty shelving today. All clean dishes, opened single service, and food items shall be stored on shelving and other areas to prevent contamination.
Replace bread pans, pizza pans, and cookie pans that have heavy carbon build up. Carbon is chipping off on some of these pans, which can possibly fall into the food.
Repair latch on hot holding unit door by pick up window. Latch is broken, causing unit to not make a proper seal. Replace chipped basket for tea urn.
Much cleaning needed on all shelving throughout establishment, including walk in cooler. Shelving contained old food debris, grease and oil build up, and other materials. Clean plexiglass by pizza prep area. Clean inside of all proofers and coolers.
Dumpster contains a hole in the corner, where the bottom and sides meet. Replace dumpster with one that is leak proof. Lid was up on Cardboard dumpster today. Door was open on garbage dumpster today. All receptacles for waste shall have tight fitting lids, doors, or covers.
Detailed floor and wall cleaning needed. Clean in floor in between proofers and cooler at front pizza prep area. Wall cleaning needed behind all prep areas and fryers to remove food splatter and grease accumulation.
