The following inspections were conducted by the Lenoir County Health Department:
Food Lion Deli
301 Washington Street, La Grange

Observations:
Slicers, not used today, have specks of food debris.
Foods in 2-door refrigerator are at 43-44f. Sliced meats and cheese in Grab-N-Go section range from 38f in the back part of the packages to 42f in the front part of the packages which is where the light is and is farther away from cold air. Buttermilk fried chicken and salads in Grab-N-Go area range from 37-45f - same situation - the farther back to foods are, the colder they are. Also, the salads made last night that were in 2-door refrigerator all night until this morning when they were moved to Grab-N-Go are still out of temperature.
Clean utensils stored on drainboard of 3-compartment sink within 10-12 inches from a handwash sink. No splashguard between the handwash sink and drainboard with clean utensils.
Single-service trays on hot bar are not inverted and top one has crumbs.
Area around hot sealer has crumbs and small debris. Nonfood contact surfaces of thermometers are grungy. Shelving has crumbs.
Area around base faucets on handwash sinks in ladies restroom up front has blackish grey build-up.
Floor in walk-in refrigerator is soiled with debris under shelving and build-up because concrete floor is hard to clean.
Two deli mops stored with head of mop up. Store these so that the head is down and is allowed to dry without soiling equipment, supplies, and walls.

Discard items and litter stored on the premises as they are not necessary to operation and maintenance. Back storage room/exit room to dumpster is very full. Establishment shall remove/discard items on property that are not needed for operation.

Clean hood vents. Clean inside of both 2 door freezers to remove accumulated food debris. Clean handles of 2 door freezers. Clean sides of fryers.
Wall cleaning needed at front prep/cooking area. Clean wall behind front handwashing sink and lift top cooler. Clean wall beside fryers.
Repair floor tiles at entrance into back room area. Floor tiles are missing in this area. Repair bottom baseboard of walk in cooler behind 2 compartment prep sink.
Need more lighting over 2 compartment sink prep area. Lighting in this area is 14-16 ft candles. Need more lighting over prep table in back room area where BBQ is chopped and prepped. Lighting in this area is 6-11 ft candles. Need at least 50 ft candles of lighting all food prep areas.

Observations:
Sesame seeds in kitchen on cook line stored in a container that peanuts were purchased in. Both foods are allergens. Employees shall be trained in Food Safety, including food allergy awareness, as it relates to their assigned duties.
Squirt bottles of sauce and containers of dry ingredients are not labelled. Several soy sauce buckets have other food in them but are not labelled. Container in which peanuts were purchased has sesame seeds inside. Food storage containers shall be identified with the common name of the food if it is not recognizable.
Much personal food storage in walk-in refrigerator above and below restaurant food storage. Some personal food storage in other areas. Keep personal food stored below and adequately separated from restaurant food storage, and label it 'for personal use only.
Personal belongings (keys, wallet, papers) stored on drainboard for clean utensils on 3-compartment sink.
Coating is peeling off wire shelving over food preparation sink and over 3-compartment sink. Protective shipping coating is peeling off splashguards between sinks - soiled and hard to clean. Owner removed protective coating and states they will clean the splashguards or either get new ones. Equipment shall be in good repair. Also, 'chopper'/equipment that cuts meat into smaller pieces is not currently working.
Cutting boards are scored and need to be resurfaced or replaced since they can no longer be cleaned properly.
Fryer basket handles covered in tape to cushion them. Fryer basket handles and other equipment shall be kept clean and shall be easily cleanable. Consider using a hot pad of pot holder.
Bowl of commode in customer restroom is soiled with slime, and faucet for handwash sink in same restroom has some grime around base.
Carpeted rugs inside walk-in and just outside door of walk-in. Floors shall be smooth, nonabsorbent, and easily cleanable. Carpet is not easily cleanable.

Several pans that have carbon build up on the outside, there were several pans that were lightly soiled on the inside.
QUAT sanitizer made this morning was very weak.
Several items removed from WIC cooler that were being held past dated time window. These items were spicy tomatoes, fennels, and tomato pie filling. All of these items were missing the freezer date/thaw date label.
White powder on counter in two containers, missing labels.
Clean utensils stored in soiled containers in the kitchen area.
Bottom Grate missing from Viv's freezer in back room, rusty cooling racks observed with clean storage. Establishment shall replace/repair equipment and maintain in good repair.
Build up of crumbs, debris, etc observed at the bottom of the Vivian's Kitchen refrigerators, shelving dusty/carbon build up. Build up present in corners of 3-comp sink.

Opened precooked chicken wings and cooked corn on the cob stored below opened raw beef and raw bacon in 2 door reach in freezer. All foods that are opened in freezers shall be stored according to final cooking temperatures.
Refried beans were not maintaining 135 degrees F or above today.
The following ready to eat TCS foods were not dated in prep cooler today: queso fresco cheese blocks, cooked tomales, cactus. The following ready to eat, TCS foods were not dated in the 2 door reach in cooler by prep sinks: cooked corn on the cob, red salsas, 6-8 containers of cooked beef stew. The following ready to eat, TCS foods were not dated in the Everest cooler today: cooked chili pork, cooked carnitas. All ready to eat, TCS foods shall be dated once opened, prepped, or cooked.
Sanitizer bucket stored directly beside opened single service utensils at front handwashing sink. All chemicals shall be stored away from opened single service, clean equipment and utensils, and food , to prevent contamination.
Several wet wiping cloths seen stored on prep areas, shelving, etc. not in use. All wet wiping towels shall be stored in containers of sanitizer at its correct concentrations when not in use.
Several soda coolers being used to store TCS foods. Data plates on soda coolers indicate they are to be used for packaged products only. Raw seafood, queso cheese dips, and other TCS foods being stored in soda coolers in facility.
Remove tape from oven handle. Repair handle if needed. Repair or replace coolers under grill that are not in use.
Women's restroom under construction today - wooden framing behind sheet rock, or drywall, is in poor repair from previous water damage. Sheet rock, or drywall, behind wooden framing is also in poor repair from water damage. Moisture has been present in these areas. Find and repair areas where moisture has caused wall damage in restrooms. Repair according to Building Code. Wall is peeling behind 3 compartment sink and handwashing sink in back kitchen area. Floor in walk in cooler is dented.

Owner wears watch while putting wieners in steamer.
Several wet wiping cloths on counter and in sink beside wiping cloth bucket. All wet wiping cloths shall be kept in an approved solution of sanitizer when not in use.
Onion chopper is stored in soiled bin with personal utensils. Food contact surfaces shall be stored in a clean location.
Red cutting surface have deep grooves making board hard to clean. Red cutting surface shall be replaced to be smooth and easily cleanable.
Existing crock pot for chili and the new one purchased to replace it are both domestic. Also, door for walk-in refrigerator and chopper for onions are not ANSI certified, either. Equipment shall comply with Parts 4-1 and 4-2 of the NC Food Code Manual.
Gaskets on refrigerator doors are damaged, coming off. Shelving in walk-in refrigerator for storage of chili and wieners is rusty. Dial area for steamer has missing part and has tape.
Owner's personal 'stuff' and food and biscuit oven are stored on drainboards of utensil washing sink.
Commode in men's restroom is soiled.
Ceiling over hot dog-food prep area is not washable.
Ceiling tiles outside of walk-in cooler are damaged and need repair. Floor in utensil wash area has peeling paint. Wall in handwash sink area is damaged. Ceiling in men's restroom is peeling.
Vent cover in men's restroom is peeling and dusty. Shall be clean and in good repair. Ceiling in walk-in is soiled.
Miscellaneous items behind store - old newspaper box, grocery carts, old gas pumps, crates, etc. The premises shall be free of unnecessary items.
Lighting in walk-in refrigerator at 30 inches above the floor is 1-2 foot candles. Shall be 10 foot candles at 30 inches above the floor in walk-in refrigerators.
