Lenoir County restaurant inspections

The following restaurant inspections were conducted by the Lenoir County Health Department:

Hardees 

4171 W Vernon Avenue, Kinston 

Date: 6/05

Score: 96

Observations: 

Sliced tomatoes, shredded cheddar cheese, cut iceberg lettuce, and shredded lettuce on main prep line had a expiration time of 1:37 pm. Foods on main prep line held by use of TPHC were held beyond their approved time.

Gasket was torn out of door. Repair cooler doors at front counter area; Cooler doors do not make a solid seal.

Clean inside of reach in freezer to remove accumulated food debris. Detail cleaning needed around biscuit prep area. Detail cleaning needed at flat top grill area. Clean broiler/grill area. 

Dumpster is missing drain plug. All dumpsters shall be equipped with drain plugs. 

Clean dumpster pad. Areas where dumpsters and garbage receptacles are located shall be kept clean.

Floor cleaning needed under front line and main prep line under all equipment and counter areas. Visible debris and build up seen in these areas. Floor cleaning needed in walk in cooler. Clean ceiling around vents and on ceiling tiles were build up of dust in present. Floor cleaning needed in walk in cooler and walk in freezer. 

Floor tiles by mop wash area are missing grout. Floors tiles are also in poor repair in this area. 

Lighting over biscuit prep area is 26-32 ft candles. Lighting over grill area, fryers, and prep line is 22-44 ft candles. Lighting shall be 50 ft candles in all food prep areas.

Observations: 

Cutting board visibly soiled.

Sanitizer measured too strong. 

One bottle of cleaner missing label.


Quick & Chicken 

802 W Vernon Avenue, Kinston 

Date: 6/04

Observations: 

Establishment did not have vomit and diarrhea clean up procedures.

Chlorine sanitizer in back prep area was 0 ppm concentration today. Chlorine sanitizer shall be maintained at 50 - 100 ppm. 

Two pans of cooked white rice cooling at room temperature on back prep table today. All foods that need to be cooled shall be done by using a method to reach 135 - 70 degrees F within 2 hours and from 70-41 degrees F within another 4 hours. 

Raw chicken thawing in prep sink under running water. Temperature of thawed portions of chicken were 58-64 degrees F. 

Do not reuse single service boxes for storing sauce cups for customers.

Big bowl used for rice has large amounts of scratching in the bottom of the bowl. Knife on magnet stripping above prep table in back prep area is missing a handle. Sauce bottles are sticky and have heavy oil build up and are no longer easily cleanable.

Cleaning needed on sides of flat top grill. Clean outside of rice cooker. Clean front portion of flat top grill where grease and carbon are present. Clean shelving in walk in cooler. Clean area around cooler lid on lift top cooler.

 Clean floor behind main cooking area; fryers and flat top grill. Clean walls main cooking area and rice cooker. Remove all storage from the floor to facilitate easy cleaning. Storage shall be at least 6 inches off the floor on shelving or items that can be cleaned under or easily moved. 

Replace or repair light above men's toilet in men's restroom. Light is not working. Need at least 20 ft candles of lighting, 30 inches above the floor, in all restrooms. Need more lighting in back storage area. Lighting in this area is only 3-5 ft candles. Need at least 10 ft candles of lighting, 30 inches above the floor, in dry food storage areas.


Holiday Inn Express and Suites

1156 Hill Farm Road, Kinston

Observations: 

Person in charge is not food safety manager certified. 

Person in charge was unaware of an employee health policy and any information about health and activities as they relate to diseases that are transmissible through food. 

Establishment did not have written procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. 

No towels at hand-sink in kitchen initially during inspection. 

Cubed potatoes 106-123 degrees F; turkey patty sausage 118-125 degrees F. All hot holding TCS foods shall be held at 135 degrees F or above. 

Opened gallon of whole milk and opened container of shredded cheddar cheese was not dated today. 

Hot water at 3 compartment sink reached 90 degrees F at maximum. Repair so that hot water is adequate to reach highest demands needed, such as dishwashing.

Stopper on sanitizer compartment of 3 compartment sink is not holding water. Sanitizer has to be poured over dishes. Dishes must be submerged into sanitizer for an adequate contact time per manufacturer's directions. Repair stopper on sink so that dishes can be submerged in sanitizer. 


Kings Restaurant 

405 E New Bern Road, Kinston

Observations: 

One hand-wash sinks not accessible in the dish room by stack of dish racks. 

3 buckets of sanitizer at wait stations measured way too weak. 

Observed several utensils, several containers with left over stickers still on them. Inside of ice machine visibly soiled. 

Observed live roaches in kitchen and flies throughout.

Hush puppy mix bag open on the bottom shelf. Establishment shall properly store food where it is not exposed to contamination.

On hallway, all dishes stacked and still very wet. Staff was unsure what these dishes were clean or not.

Employee fridge missing grate cover, currently using a/c filter as cover, so grease is building up inside equipment. Door handle broken on microwave. Chicken coolers (inside and outside) not holding temperature properly, due to this food is not being kept inside these units and a repair man has been called.

Fans heavily dusty and grease build up. Establishment require much additional cleaning.

Leak presents at 2 comp sink and hand-wash in dish room. 

Ceiling tiles have damage, wall behind the ice machine in the kitchen, panels are separating from wall and curling back. Floors, walls and ceilings, and vents need additional cleaning due to build up of dust, grease, flour, etc. Backsplash at plate prep counter is heavily soiled.

Employee drinks and food found scattered around entire kitchen.


Hampton Inn 

1382 Hwy 258 S, Kinston

Score: 94

Observations: 

A wisk and aluminum foil box was stored in and in front of the lavatory.

There was not soap or towels in the restrooms.

The waffle containers shall be washed, rinsed, sanitized each day when breakfast if dismantled and leftovers discarded. The counter mount can opener shall be kept clean.

The cabinets and drawers in the self serve area need cleaning of spills on the fronts and insides. The cabinet under the coffee station in the hallway has water ponding and molding. Repair the water issue and maintain all of these surfaces clean and in good repair.

The dumpster is still missing the plug.

Floors throughout the facility including the walk in cooler shall be kept clean. The walls in the walk in cooler are dusty/moldy. 


Taco Bell

1806 W Vernon Avenue, Kinston

Observations: 

Hand drying device is broken in men's restroom. Single use paper towels were available, but being stored on opened baby changing table. Store single use towels in a clean area to prevent contamination. 

Fries, held by use of time as a public health control, were being held for 30 minutes instead of 15 minutes, as listed on the time as a public health procedure.

Quat sanitizer concentration was in excess of 500 ppm today.

Area under dumpster needs to be cleaned. Garbage dumpster is leaking at the bottom.

Repair wall damage beside dry storage shelving near office/drive thru area. 


Wok N Roll

2424 N Herritage Street, Kinston

Observations: 

Broom, dust pan, and large container used to soak hood vents were stored in front of back hand-washing sink today.

Dumplings in containers in walk in cooler were not dated today.

Written procedure not available in facility for holding cooked chicken wings and egg rolls by use of time, instead of temperature.

Items, such as sugar, MSG, etc. at wok area not labeled today. 

Bowls of foods stored on top of uncovered ready to eat foods today in lift top cooler. All foods shall be protected from potential contamination. Bottom of bowls may contaminated foods. Containers of food that are stacked on top of each other shall be protected with barriers in between such as covers, lids, etc.

Towels stored in bucket of soapy water. Linens (wiping towels) shall only be stored in buckets of sanitizer at its correct concentration.

Knife stored in between table and prep cooler. Scoop at rice cooker, used to scoop rice, stored against outside of rice cooker and not on a clean, sanitized surface. All in - use utensils shall be stored in the food, handle up; in a clean, sanitized container; in water at least 135 degrees F; or in a dipper well.

Wall cleaning needed behind prep sinks. 


Happy Seafood Family 88, LLC

2405 Herritage Street, Unit J, Kinston

Observations: 

Rolling Prep cart blocking hand-washing sink by main cooking area. All hand-washing sinks shall be easily accessible for hand-washing.

Small soda cooler at front counter area is being used to store small containers of homemade coleslaw. Sticker in back of cooler states " only for the sale and display of products distributed by Coca-Cola Bottling Co." All equipment, with the exception of hoods, microwaves, hot water heaters, toasters, and mixers shall be commercial.

Remove ice build up on shelving in walk in freezer.

Clean cooler beside small freezer to remove accumulated food debris. Detail cleaning needed outside of fryers.

Floor tiles by 3 compartment sink are in poor repair; some areas are missing.

Remove accumulated ice from walk in freezer floor.
