Evelyn Dove Coleman: Old Friends Left a Legacy

Evelyn Dove Coleman: Old Friends Left a Legacy

One of my father's favorite people was the Rev. Joe Hill. He claimed it was for his forthright sermons, but we teased him that it was because of Rev. Hill's blueberry cobblers. My father grew blueberries in his orchard at 539 Briary Run and Rev. Hill could pick as many as he wanted. For one thing, he would always bring back out a newly baked pie, and that was no secret.

However, Rev. Hill did hoard a secret.  He made scrumptious carrot cakes. The mellow, moist creations bore his personal touch that no other carrot cake could compare to.  As good as the ones are at Outback Steak House and Tanya's Cafe in Chapel Hill, something's different. Some chefs have a green thumb for baking.  And some sneak in a secret ingredient that elevates the flavor without being obvious.

Well, one day years ago when my twins were teens, Rev. Hill invited my father over to watch him make a carrot cake and chew-the-fat out in his cook house behind his real house.  As he put together his masterpiece, he allowed my son to write down each step and each ingredient for his grandfather. What a gift. He had decided to share his secret recipe with his friend.

Now those two old friends are neighbors in heaven. And their secret recipe is part of their legacy.
