The following restaurant inspections were conducted by the Lenoir County Health Department:
Kam's Hibachi & Subs
2719 Hwy 11/55, Kinston

Observations:
Soap dispenser not functioning at either hand-wash sink in kitchen.
Observed pitchers and containers with food build up present, sticky residue and left over stickers.
Several sauces in kitchen missing labels.
A wet wiping cloth was laying on packing table. Store wiping cloths in bucket of properly mixed sanitizer.
Ice scoop stored with hands contacting product.
Cutting boards observed to have deep groves and stains present.
Handle missing on Pepsi unit, attachment pieces currently wrapped in tape (which cannot be properly cleaned), walk-in cooler dripping in two places.
Food build up present on gaskets of units, inside and outside of equipment, prep tables, etc. Everything has a sticky residue or film present.
Build up present on walls and floors. Floor at front line is extremely sticky. Grease build up present behind cook-line.
Patches in walls in back room are not smooth and easily cleanable.
Employee food and drinks mixed in with establishment food.
Royal Farms

Person in charge could not find vomit & diarrheal clean up procedures.
All 3 hand-washing sinks did not have single use towels in towel dispensers today.
Two out of 3 hand-washing sinks did not have soap in dispensers initially during inspection.
Tongs used to get chicken out of hot holding cabinet were hanging on the handles of equipment today.
Observed dishes stacked wet.
Repair broken shelving (portion on the bottom) in chicken walk in cooler.
Clean outside of Henny Penny to remove accumulated grease and food debris. Clean outside areas of splash guards at handwashing sinks. Clean rolling carts under hood to remove accummulated food debris. Clean all shelving in walk in coolers and walk in freezer. Cleaning needed around hinges and white board at hot holding unit; board shall be removed from this area and washed, rinsed, and sanitized. Accumulated food debris seen in cracks and crevices of this area. Clean inside of hot holding cabinet to remove old food debris. Clean inside of 4 door cooler. Detailed cleaning needed throughout facility.
Mop sink has a continuous leak (stream) of water coming out of the faucet. Prep sink is also dripping water. Handles and knobs on both plumbing fixtures are turned off tight, but fixtures are still leaking.
Cleaning needed in all handwashing sinks in facility.
Trash in dumpsters is not getting removed off premises. Trash shall be disposed of on a more frequent basis or anther dumpster is needed. Refuse, recyclables, and returnables shall be removed from the premises at a frequency that will minimize the development of objectable odors and other conditions that attract or harbor insects and rodents. Birds were seen picking at the trash that has been accummulated in this area.
Lids open on dumpsters today. Dumpster lids cannot close due to the large amounts of trash inside the dumpsters.
Dumpster pad area (enclosed with fencing) has large amounts of accummulated trash and food debris. This area needs to be cleaned. Birds and other pests are present due to the accummulation of trash on the dumpster pad and inside of the fencing area.
Mops laying flat down inside of mop wash basin today. Mops shall be placed in a position that allows them to air dry without soiling walls, equipment, or supplies.
Taqueria Michoacan

Raw chicken over raw beef in 2-door reach-in, raw shrimp over juice/beverages in pitchers in 3-door sliding door reach-in, and raw chicken over raw beef in lift-top refrigerator.
A couple of dry ingredient containers are not labelled.
Manager wears bracelet and is handling food.
Several wet wiping cloths are on prep tables.
Rice scoop handle is inside rice, and bowl for scooping sugar has no handle. Handles of scoops shall be above the top of the food.
Plastic, quart containers are being reused, single-service items may be used only one time.
Few single-service items are stored so that they catch crumbs, and a couple of open boxes of aluminum to-go trays. Single-service items shall be stored in a protected manner.
Rusty shelving in back room. Can opener and base plate is rusty. Large, Brute container in back (for linen, maybe) is melted.
Ice machine baffle has grey spots and sludge, and can opener base is soiled. Aluminum foil covers steam well.
Grate for window unit air conditioner is dusty.

Observations:
No ready-to-eat, TCS foods were dated. Ready-to-eat, TCS foods shall be dated when foods opened, cooked, or prepared.
Single-use and single-service articles cannot be reused. Chicken bouillon containers being used to store packages of cooked rice and sauce cups. Rice bags being used to store small bags of shrimp in back white freezer. All single use and single service items shall be discarded after contents are emptied.
Haier refrigerators (with freezers at the top) are not commercial. Frigidaire white chest freezer is not commercial. White reach in freezer is not commercial. Glass, 2 door cooler, is designed to hold prepackaged food items only. Cooler is being used to cold hold foods made inside facility. All equipment, with the exception of toasters, mixers, microwaves, water heaters, and hoods shall be ANSI certified or equivalent.
Handle is loose on white, reach in freezer across from 2 door glass cooler. White Frigidaire cooler is in very poor repair; the lid is completely broken and rusted along the edges. Gasket is torn on lift top prep cooler. Replace particle board (being used for a table top) that is not in good repair and absorbent. Rice warmer (bowl area) is not longer a smooth surface for easy cleaning.
Clean plexiglass across from fryers. Defrost and clean inside of all chest freezers. Large amounts of ice buildup seen in these areas.
Repair dripping faucets at hand-washing sink beside lift top cooler and prep sink. Water continues to drip from faucets even when handles are tightly pushed to turn the water off.
Need more lighting at front counter area. Owners prep food in this area; such as sushi rolls, cutting produced, cooking, etc. Need more lighting in hood; 2 bulbs are burned out in hood. Lighting in all food prep areas shall be at least 50 ft candles.
Chens Chinese

Person in charge does not have food safety manager certification.
Cold holding TCS foods not maintaining temperature of 41 degrees F or below today.
Pan of cooked lo mien noodles cooling at room temperature. Owner stated noodles were just cooked. Ambient air temperature inside facility was 77 degrees F. Educated owner that cooling foods at room temperature will not allow foods to reach time/temperature parameters for cooling.
Two deep pans of cooked chicken wings cooling in walk in cooler. Owner stated chicken wings were cooked around 1 pm. Educated owner on cooling foods in deep pans will not allow foods to cool equally and meet time/temperature parameters for cooling.
Several sauces and spices not labeled today; those at wok area, inside prep cooler, and throughout establishment.
Container of cut broccoli sitting directly on top of another container of cut broccoli with no cover or barrier in between. Container of raw shrimp sitting directly on top of another container of raw shrimp with no cover or barrier in between. 6 containers of sweet and sour chicken not covered in the walk in cooler. All foods shall be kept covered to prevent contamination. Do not stack pans of food on top of each other without another cover, lid, or barrier in between.
Pepsi cooler is not approved for storage of TCS foods. Foods such as general tso chicken, cooked chicken wings, cooked ribs, etc. cooked in establishment are being cold held in cooler. All equipment with the exception of toasters, mixers, microwaves, water heaters, and hoods shall be NSF or ANSI equivalent.
Repair paper towel dispensers that are broken in restrooms or replace covers. Remove/replace/repair any equipment and dishes that are no longer in use such as rice warmer, ice machine, pans, etc.
Floor has a long crack down the middle of establishment. Cover over grease trap (located in floor in back of restaurant) is in poor repair. Replace immediately.
Floor cleaning needed under wok area and near 3 compartment sink and prep sink.

Gaskets to reach in units need additional cleaning, due to build up present. Build up present on equipment doors, handles, inside of drawers, bottom of equipment, inside lid to lift-top cooler and shelving in refrigeration units.
Main Moon Chinese Restaurant

Observations:
Bagged ice used for customers drinks, stored below raw seafood items in reach in freezer. Foods have been removed from their commercial, hermetically sealed bags and placed in other pans and bags in the freezer. Ice is poured into a small cooler, scooped, and used for customer beverages. Ice is a food, and shall be stored on the highest shelving above raw meat and raw seafood food products.
Half Pan of General Tso chicken was 86-87 degrees F today.
Big bowl of sliced cooked chicken cooling on prep table today. All foods that need to be cooled shall be done by a method that will meet time/temperature cooling parameters of 135-70 degrees F within 2 hours and 70-41 degrees F within 4 hours.

Few oval plates, saucers, blue ramekins, potato salad scoop, and s/s oval dishes in oyster bar have not been cleaned thoroughly.
Slaw in large, plastic, food storage container of in 2-door reach-in in salad area is 43f.
Used dry breader for breading raw seafood that has raw seafood pieces inside after being used is kept at room temperature.
Raw fish thawing in running hot water.
Several oval plates, saucers, a crock pot insert, and s/s ovals in oyster bar are stacked wet. All utensils shall be stored in a manner to facilitate thorough air-drying.
Small pot for melting butter is very pitted inside. Shall be replaced ASAP, or use a different, approved pot.
One pot for boiling water is peeling on the inside - replace.
Electrical cords and plugs are heavy with dust and grease. Fryer guts are soiled. Build-up on bottom of butter pot. Oven, just inside doors, has much carbon build-up. Undersides of lids for 6-drawer lift-top refrigerator in burner area are soiled. Red coolers for holding aluminum foil-wrapped baked potatoes are damaged. Area of dishmachine near where utensils enter machine has black crud. Steamer handles have few crumbs. Ice machine has black slime behind where door lifts. Pan in 6-drawer lift-top where clean towels are stored has food debris and spills.
Two faucets leak when water turned on - handwash sink in bar and sink near steamers. Toilet seat is very loose in ladies room.
Handwash sink in bar has brown crud.
Few areas of floor grout needed. Few areas of wall damage.
