The following inspections were conducted by the Lenoir County Health Department:

Observations:

Wall covering behind prep sink and hand-wash sink chipping and flaking.

Blue Hornet Country Store & Grill

6409 Hwy 258 S, Deep Run

Observations:

No ServSafe certified manager at establishment.

Mop stored in mop bucket. Employee stated that mop string that allows mop to hang is broken.

El Nuevo Tequila Mexican Restaurant

1030-A W New Bern Road, Kinston

Observations:

Observed items in hand-wash sink (cloth, strainer, block).

Provide paper towels or approved alternative for hand drying at each hand-wash sink. At hand-wash sink at both wait stations and at employee bathroom had been switched to the automatic blower.

Oysters stored without tags. A tag was found but had been removed from the oysters.

Observed several pans visibly soiled and had left over date marking stickers. Can opener visibly soiled.

Lots of items in the cooler drawers under the grill temping 52 degrees (chicken, fish, beef, pork). Prepped meat had been tightly packed in containers prior to going into cooling drawers.

Items prepped yesterday at topping/salsa lift-top missing date mark.

Several items had incorrect date marking stickers, having 8 days.

Lots of food items in the walk in cooler and cooling drawers in tightly packed and full containers. Tightly packing food in these containers will not allow the food to properly cool down.

Many sauces missing labels.

Soiled wiping cloths scattered around kitchen, wet wiping cloth in hand-wash sink.

The utensils and storage surface must be cleaned and sanitized every 4 hours. Cooking utensils stored on handle of the grill area. Utensils shall be kept in a clean location.

Observed pans and dishes stacked wet.

Black electrical tape on several parts of the immersion blender.

Cutting boards observed to have deep groves present.

Observed heavy build up on gaskets through out facility, on shelving units, sinks, on outside of equipment, etc.

Employee restroom missing self closing door.

Observed damage to wall at corner of dish machine coming into kitchen, holes in wall of salsa room, and damage to wall in storage room from pots and pans. Ceiling tiles in dry storage showing water damage. Light switches attached to wall visibly soiled.

Mops sitting at the bottom of the mop sink. Although they are stored with the head down, they are not hanging so they cannot properly air dry.

Three lights out or missing under the hood at the grill area.

Little J's Pizza

Observations:

Plastic-wrapped pans of raw chicken above deli meat sliced in-house and packaged in plastic bags in outside walk-in freezer.

Chicken wings partially fried about 20 minutes before EHS arrived are at 95f and stored at room temperature.

Ziploc bags of spaghetti cooked this morning packed tight, par-cooked fried chicken wings cooked this morning for take-out order this afternoon at room temperature, medium-size covered pot of spaghetti sauce heated this morning, and sliced lettuce heads cut this morning in big bags are cooling to meet time and temperature parameters.

Raw chicken in small pan and partial bag of pizza topping meat near door in bottom of lift-top refrigerator between oven and cooking equipment are 43f.

Deli meats in refrigerators (some thawing, some not) after being sliced and frozen and pans of lasagna are only marked with slice/freeze date, which is Day 1. If foods are frozen the same day after opening/cooking, Day 1 is the date the package is opened/food is cooked, Day 2 is the date the food is removed from the freezer. This date needs to be marked, as well.

Foods listed in item #20 are not cooling by approved methods.

Handles of scoops in dry ingredients are in contact with the food (flour, chicken breading, sugar, etc).

Hot water at hand-wash sink in kitchen is approximately 95-96f. Hot water at hand-wash sinks shall maintain 100f or above.

Brighthouse Mart and Grill

5189 Hwy 55 W, Kinston

Observations:

No certified food protection manager on shift at the time of inspection.

No paper towels available at hand-wash sink.

Mold present today on tomatoes in lift-top.

Rust present in RIC and RIF units. Lift-top temperature is not functioning properly, and is not being used at this point.

Double burner not ANSI certified, it is a piece of residential equipment. Approved ANSI certified equipment required.

Observed leak at prep sink. Plumbing shall be maintained in food repair.

Mop sink lacking back flow preventer on hot water side. Back-flow preventer shall be provided.

Dumpster missing side door and uncovered. Establishment shall obtain so dumpster can be properly closed.

Piggly Wiggly Deli

2407 D N Herritage Street, Kinston

Observations:

Lack of managerial control is present in establishment today. Repeat priority items out of compliance today.

Raw bacon and raw pork chops (prepped) stored above ready to eat foods, such as cooked collards, cooked hamburger steak, cooked meatloaf, etc. in walk in cooler.

Prep sink where raw chicken is prepped contained raw chicken debris from early morning prep. Prep sink adjacent to the other prep sink contained heavy tea and coffee stains where pouring of tea and other drinks occurs. Ice machine contained mildew inside of ice chute.

Hot holding TCS foods on hot bar (front counter serving line) and grab & go were not being held at 135 degrees F or above today.

TCS foods cold holding on salad bar were not maintaining at 41 degrees F or below.

Cooked diced chicken, crab salad (made in establishment), opened cheddar cheese and mozzarella cheese, diced ham & turkey, and cubed assorted cheeses were not dated in reach in cooler is salad prep area.

Live flies seen in establishment today. Several (10 or more) dead flies seen in cold holding customer grab and go area in front of the deli where packaged food items are stored.

Pan of cut cheddar cheese found uncovered in 2 door reach in cooler in kitchen area. Bowl of cut cheddar cheese was stored directly on top of the cheese today. This is a potential cross contamination issue.

Repair hot holding grab & go unit that is not maintaining 135 degrees F or above. Repair salad bar that is not maintaining at 41 degrees F or below. Repair 2 door reach in cooler in salad bar prep area that is not maintaining at 41 degrees F or below. Replace sliding doors on hot bar. Doors have been removed, which could be inhibiting hot holding TCS foods from maintaining a temperatures of 135 degrees F or above.

Cleaning needed in all hot holding cabinets where food debris and grease have accumulated. Clean inside hot holding cabinet across from cake decorating table to remove large amounts of accumulated food debris. Remove black matting at cold holding grab & go area in front of deli and clean shelving. Clean shelving under long prep table to remove food debris and food spills. Clean shelving and organize front counters and cabinets at front counter area.

Floor and wall cleaning needed throughout establishment. Floor cleaning needed at hot holding units were large grease build up is present. Wall cleaning needed especially where food prep and slicing occurs, such as salad bar prep room and on wall behind meat/cheese slicers. Floor cleaning needed behind and under all equipment and shelving. Drains need to be cleaned under food prep sinks where food debris has settled and accumulated outside of the drain. The basket to collect the food debris has been pushed down into the drain. Food debris accumulating in areas where grout is missing.

Replace missing grout around floor tiles. Water and food debris is settling in these areas.

Items in lift-top cooler temping from 48-51 degrees. This was following the lunch rush, after the pizza oven had been used frequently (which put off a lot of heat by the unit), and after the top of the lift-top unit had been restocked.
