The following restaurant inspections were conducted by the Lenoir County Health Department:
Fatbaby's Country Cooking
1215 Greene Haynes Road, Kinston

Observations:
Additional cleaning is needed on gaskets, equipment and handles of equipment.
Walls and ceilings and floors observed to need additional cleaning.
Employee drinks scattered around kitchen area (under hot holding units, on shelving units, above 3 comp sink, etc.). Establishment shall designate an area for employee drinks to prevent contamination from occurring.
Vance's
3601 Hwy 55, Kinston

No ServSafe certified worker present.
Sanitizer was too strong.
Bottles of unknown sauces missing labels.
Panini press and food processor not ANSI certified.
No test kit available to measure sanitizer concentrations.
Dumpster lid open, dumpster shall remain tightly closed to prevent contamination with trash leaking out or pests getting in.
Lots of unused items in storage room. Remove any items on premises that are not being utilized and are collecting dust.
There is still a crack in the ceiling running from the kitchen to the dining area, where the paint in peeling.

Observations:
Establishment did not have a written procedure for vomit or diarrheal events.
Potato pan found with old food debris.
Chicken tenders cooked in fryer were a final internal cooking temperature of 148 degrees F. Chicken tenders were stuck together and were not separated before frying.
Raw shell eggs in cooler at the end of prep line were 54-56 degrees F today. Raw shell eggs shall be stored in refrigeration that maintains an ambient air temperature of 45 degrees F or below.
Sliced tomatoes, cut romaine lettuce, and cut sandwich lettuce being held by time as a public health control were marked not following approved procedures approved by the State.
Employees handling food, clean equipment and opened single service seen wearing bracelets today. Except for a plain ring, such as a wedding band, food employees may not wear jewelry other than a smooth wedding band on their wrists or hands.
Door on cooler under main prep line is missing a gasket.
Replace cover on walk in cooler components outside.
Employee washing dishes in water that was 104 degrees F. Sink was drained and wash water was refilled at 119 degrees F. During the inspection, another employee was washing dishes in the sink that had been refilled. Wash water temperature then was 109 degrees F. Sink was drained a second time and refilled at 115 degrees F. Wash water shall be maintained at a temperature of 110 degrees F or above.
Clean inside of reach in freezer beside potato oven to remove excess food debris. Clean hot holding unit above prep cooler on main prep line to remove food debris. Door on the Inside of cooler under main prep line has mold accumulation. Cleaning needed on hinges, doors and all areas on main prep line. Food and grease accumulation seen in these areas.
Dumpster was missing a drain plug.
Air vents in ceiling contained heavy amounts of dust and need to be cleaned.

Hold in-use wiping cloths in properly concentrated sanitizer between uses. Wet wiping cloth on lift-top cutting board.
Upon arriving, ice cream scoop was resting in still water.
1 door reach-in-cooler in back room is currently not functioning.
East Coast Wings and Grill

Observations:
Cooked chicken wings on uncovered speed rack in walk-in stored in close proximity to boxes and pans of raw chicken breasts.
Cutting boards have carbon on them. Some stacked, clear, plastic pans and lids for these pans have not been cleaned thoroughly.
Few squirt bottles of sauces are still not labelled.
Styrofoam container of cut lettuce in bottom of lift-top refrigerator in standing water.
Sugar scoop has no handle. Scoop for salsa in bottom drawer of refrigerator and for dressing in walk-in refrigerator are cups. Scoops for food shall have a handle and shall be stored with their handles above the top of the food.
Some shelving is rusty. All nonfood contact surfaces shall be in good repair. Water standing in bottom of lift-top refrigerator.
Cutting boards are getting hard to clean. Shall be in good repair or discarded.
Refrigerator door coming off hinge. Water standing the bottom of the lift-top refrigerator.
Take-out pack area is soiled. Bread rack trays have build-up of crud. Fryer backs have build-up. Freezer has build-up of ice and is soiled with grease. Drainboard for clean utensils is soiled. Plastic utensil bins are soiled (some have been replaced). Faucet at pre-wash sink and sprayer head at same sink have build-up. Trays for pre-packaged single-service utensils have crumbs.
Hand wash sink is draining slowly.
Hand wash sink near dish machine has black crud inside.
Dumpster has hole in bottom allowing leakage.
Lid on dumpster in disrepair.
No trashcan provided for hand-wash sink near dish machine.
Floor missing grout. Areas on walls no longer easily cleanable and damaged.
Area around electrical sockets in tea area has build-up.
Lighting in dish machine area and in wait station area is short. Bulbs are not working.
Beach Bound

Observations:
Upon arriving, there was a chair blocking the hand wash sink in the back room.
Opened roast beef and turkey deli meat missing date mark.
Build up of crumbs visible on bottoms of coolers, as well as the doors and handles of the units, and shelving units.
Discard items and litter stored on the premises as they are not necessary to operation and maintenance. As menu has changed to not include hot dogs, there are lots of utensils and pans present in the establishment that are no longer used and collecting dust/crumbs. REHS discussed with PIC cleaning all of these items and relocating them to a bin stored in the establishment, so they do not collect dust and remain clean, but so they are also still available if changes to the menu happen again.
