The following restaurant inspections were conducted by the Lenoir County Health Department:

Subway

2405 North Herritage Street, Kinston

Score: 91

Inspection date: 7/2/19

Observations:

No certified food protection manager present;

Person in charge could not adequately describe employee health policy;

Employees were not washing hands properly;

Sanitizer read 0 ppm - dispenser appeared to be malfunctioning;

Meatball in hot-holding were 119-136F - shall be at least 135F or above;

Turkey and tomatoes on the make line were 43-50F - should be 41F or below;

Food in walk-in were not properly cooling - use shallow pans, thin layers and leave foods uncovered when cooling;

Wet wiping cloths not held in proper strength sanitizer;

Employee did not wash vegetables before cutting;

To-go salad containers stored exposed underneath make line;

Inside of refrigeration units need additional cleaning;

Dumpster is beginning to rust out;

Walls behind prep areas need additional cleaning;

Observations:

No certified food protection manager present;

No comprehensive employee health policy;

Raw sausage dogs stored above condiments;

Foods in reach-in were 42-60F - shall be 41F or below;

Hot dogs/sausage dogs not date marked;

Can was does not have hot and cold running water;

Vents on air return need additional cleaning;

Inspection date: 7/10/19

Observations:

Employees should wash hands after handling raw foods, when changing tasks, and when re-entering kitchen;

Mayonnaise and salad dressing stored below raw bacon;

Raw chicken stored above eggs to thaw;

Raw chicken left on counter to thaw;

Shelving and insides of drawers need additional cleaning;
