The following inspections were conducted by the Lenoir County Health Department:

Observations:
Establishment did not have written procedures for employees to follow when responding to vomiting or diarrheal events.
Employee seen turning off faucets with barehands after they were washed. Employee did not use a single use towel or another barrier to prevent recontamination of hands.
Employee scratched his head after washing hands and went to handle clean dishes.
Raw seafood and raw beef out of their hermitically sealed containers stored containers stored above opened ice cream in reach in freezer in back storage room. Raw beef stored directly beside cut carrots in 2 door reach in cooler. There is not separation or partition between the two sides of the cooler.
Unwashed bok choy in a box stored above ready to eat produce in reach in cooler. All unwashed produce shall be stored below ready to eat foods.
Potato slicer (for French fries) contained dried food debris today. Slicer in back storage room area contained dried food debris. Dishes stored on shelving not 6 inches above the floor contained food debris. Dishes behind plastic curtain are catching crumbs and food debris.
Sliced tomatoes, 2 containers of sweet potato puree, prime rib egg rolls, cooked plantains with mushrooms, and risotto in 2 door cooler with no dates. Cooked collards, homemade beef stock, feta cheese in 1 door cooler with no dates. Opened container of cream and 2 opened containers of half and half stored in 3 door cooler with not dates.
One container of glass cleaner stored in wait station area directly beside open food products. One container of glass cleaner stored in wait station area stored directly beside opened single service. Bottle of degreaser stored on prep sink splash guard directly above lamb that was thawing in the sink. Spray bottle of sanitizer stored in the middle of bags of bread.

Dirty dishes stored on drainboard of prep sink while lamb was thawing in the sink. Drippings and food debris from dishes could contaminate food.
Employees seen handling food, clean equipment and utensils, and clean linens with beards. All employees with beards handling food, clean equipment, clean linens, and opened single service shall keep them covered with a beard restraint.
A few Dishes and clean equipment stored on bottom shelf of air drying rack are not 6 inches above the floor. Ice buckets in wait station area stored directly on the floor.
Customer utensils (forks, knives, spoons) stored food contact surface up. All utensils shall be stored and presented so that only the handles are touched by employees and consumers if the consumer self service is provided.
Wood that is used to bolt potato cutter (for French fries) is not easily cleanable and is chipping.
Griddle used to cook pancakes in not NSF approved.
Drainboard for dish machine is not large enough to accommodate dirty utensils. Dirty utensils are being stored on a wheeled cart that is stored in between the hand-washing sink and directly in front of the food prep sink and on drainboard on prep sink. Drainboards, utensil racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation shall be provided for necessary utensil holding before cleaning and after sanitizing.
Shelving coated in aluminum foil in kitchen area. Aluminum foil is ripped and dirty.
Second sink in 3 compartment sink is leaking today. Water is dripping from pipes and into a bucket to catch the water.
Repair wall behind prep sink where paint is chipping and peeling. Wall damaged at the right end of the dish machine.
Remove carpeted rug by 3 compartment sink. This area is subject to moisture and rug is absorbent.
More lighting needed at 3 compartment sink; less than 10 ft candles of lighting here. More lighting needed in wait station with ice machine; lighting is 15 ft candles in this location. More lighting needed in Prep room where reach in coolers and salad cooler are located.

Person in charge shall demonstrate knowledge by being a certified food protection manager. Establishment has an employee who is ServSafe certified, but no certified staff member was present during the inspection.
Some exposed meat in containers in both the meat reach in cooler and the freezer.
Ice machine and can opener visibly soiled.
Cutting boards (on lift-top and small cutting boards) observed to have heavy staining or grooves.
Build up observed on shelving units, dish racks, bottom of coolers, on cooler gaskets, and under equipment on tables in kitchen.
Floor had areas of water pooled from mopping/cleaning.

Food employee does not wear hair restraint.
Rusty shelving in walk-in. Rusty hinges on lift-top refrigerator.
Top of ice machine soiled. Middle compartment of 3-compartment sink has black crud.
Enclosure for garbage has much garbage and miscellaneous 'stuff' on the ground.
Floors in kitchen, walk-ins, and restrooms are worn and no longer easily cleanable. Corner of baseboard in restroom is brown and damaged.
Lighting in storage room is very dim.

Wet wiping cloths scattered around kitchen (on fryer line, on stock room shelves, etc.)
Deep groves observed on several cutting boards.
Servware freezer and walk in cooler (chicken cooler) observed to have drips from unit.
Better and more frequent cleaning is needed on the refrigerator handles and edges, the refrigerated drawers, the BIG Bo hot hold cabinet, the shelving in the walk in coolers, lower shelving and any other surfaces where grease, dust, hand contamination occurs.
Leak observed at left faucet on 3-comp sink.
Flour buildup (not just from today) observed around equipment wheels and under refrigerators.
