The following restaurant inspections were conducted by the Lenoir County Health Department:
Wake and Bake Bakery

Observations:
Foods such as sliced ham and turkey are past the date mark by several days
Wet wiping cloth stored on the sink.
Dumpster area has much debris in open bag, spilling out. Been there for a while. This area shall remain clean and free of unnecessary items.
Mop hangs outside with head up so that crud can run down the handle. Hang mop with the head down so that equipment, etc does not get contaminated and so the mop can dry.
Lighting short on prep tables.

Splash from hand-washing is coming in contact with food in top of entree lift-top. Permit condition states larger splashguard shall be installed if existing one does not prevent splash. Install larger, more effective splashguard as soon as possible.
Few wet wiping cloths on prep surfaces, etc.
Employee towel dries utensils. Utensils shall be permitted to thoroughly air-dry.
Dumpster left open.
Floor is soiled under & behind equipment. Clean as frequently as needed.

Food handlers wear hair restraints, but the restraints could be more effective by keeping all hair retrained. Effective hair restraints shall be worn by each food handler.
Wet wiping cloths in bucket of water and a bucket of sanitizer. However, even though the solution of chlorine sanitizer is the right strength, it is murky in color and not fresh/clean.
Caulked areas around drop-in 3-compartment sink pans is exposed to splash and soil is starting to accumulate due to being hard to clean.
Sink compartments of 3-compartment sink are not large enough to accommodate the stainless steel pan used for keeping hamburgers hot. Pans small enough to fit inside the 3-compartment sink shall be used.
Caulk around pans used for 3-compartment sink is starting to accumulate soil.

Water from ice machine in drive thru area is missing floor drain; spilling on to floor. Plumbing needs to be maintained so that water discharges into floor drain to prevent contamination.
