The following restaurant inspections were conducted by the Lenoir County Health Department:
Kam's Hibachi & Subs
2719 Hwy 11/55, Kinston

Observations:
A wet wiping cloth was laying on sandwich prep board. Store wiping cloths in bucket of properly mixed sanitizer.
Ice scoop and sugar scoop were stored with hands contacting product.
Cutting boards observed to have deep groves and stains present. Establishment shall repair/replace to ensure cutting boards can be cleaned properly.
Handle missing on Pepsi unit, attachment pieces currently wrapped in tape (which cannot be properly cleaned), torn gasket at freezer, walk-in-cooler dripping in two places. Establishment shall repair/replace to ensure to equipment is in good repair.
Food build up present on gaskets of units, inside and outside of equipment, prep tables, etc.
Many food utensils and items stored in back room that the establishment does not use for the restroom. These items shall be removed.
Build up present on walls and floors. Establishment shall clean and maintain.
Patches in walls in back room are not smooth and easily cleanable.

Few dispensing utensils stored in pan in register area have not been cleaned thoroughly, and slaw chopper has remnants of cabbage left in chute.
Can opener blade has crud and shall be washed, rinsed, and sanitized as soon as possible.
Raw pig in walk-in refrigerator is 43f. Unopened container of commercially made potato salad in same refrigerator is 42f. Air in walk-in refrigerator is 49f - VR Visit required. EHS will return tomorrow morning at 7:30 to check this refrigerator. Door does not close properly, and staff is forgetting to put wedge in handle to keep it completely closed.
Date marked foods are dated for 8 days instead of 7.
Few dry ingredients are not labelled.
Door for pit left open during cleaning during past few minutes, and many flies present.
Food employees wear bracelets and rings. Food handlers shall wear no jewelry on arms and hands other than a smooth ring similar to a wedding band.
Few scoops in dry ingredients have no handle.
Single-service cup and spoon used more than one time for beating eggs. Also, styrofoam cup used for scooping dry ingredients. Styrofoam is to be used only one time. Single-service items may be used only one time and then shall be discarded.
Some styrofoam clam shells in outside storage building that are not in packaging. These shall not be used due to not being protected from contamination.
Wooden support for hand-wash sink is damaged and rough. Vinyl coating is absent on portions of vinyl shelving. Some shelving is rusty.
Lids of containers are soiled. Shelving is soiled. Equipment has build-up of soil and grease. Some equipment has carbon marks. Sink faucets soiled. Some sink compartments are soiled.
Upon arrival, cardboard boxes on the ground in dumpster area. Also, several miscellaneous items on the premises.
Areas of floors, walls, and ceilings are soiled.
Drip from ceiling near doorway between kitchen and storage room. Shall be repaired. Damage in ceiling in pit room. Shall be repaired.
Several miscellaneous items on the premises out back that appear to be unused.
Ma's Hot Dog House & Grill

Observations:
Back door has visible sunlight showing slightly at place where doors meet, insects and pest could enter in from this hole.
Aroma rice steamer, stove and refrigeration not for commercial use.
Chipping shelves, bar, and cabinets in reach in units next to cook line. Shelving shall be repaired or replaced with approved ANSI equipment. Front line cooler not holding temp properly. Leak present at A/C unit in the back stock room.
Shelving in BOH and above prep unit in FOH visibly soiled.
Slight leak at faucet of 2-comp sink.
Some areas of floor are cracked and wall above prep table has chipping paint.
Lighting above prep tables read 11-17 ft candles in the front and back room. Light intensity above cook top, under hoods read 6 ft candles. Lighting shall be 50 ft candles of light above all food prep areas.

Establishment reusing mayo single service containers as storage containers. Single service items cannot be reused.
Torn gaskets on both door to reach in unit in back room.
Gaskets to reach in units need additional cleaning, due to build up present.
Midway Mart & Grill, LLC

Observations:
There is not a Certified Food Protection Manager present.
Hold in-use wiping cloths in properly concentrated sanitizer between uses. Wiping cloth was in a bucket of >200 ppm and scattered around back prep-room.
The ice cream scoops are being stored in correct place (rinse basin on ice cream unit), but the water has very little pressure and the basin is holding a lot of water.
The cook line equipment observed to have pretty heavy buildup of dust/grease. The hood filters need cleaning as well.
Staff personal drinks being stored in ice cream unit. Provide a place for purses, coats, phones, etc away from food, food service items.
