Winter on the Farm
From TC Smith Farms – Written by Kim Smith
As the busy season winds down, many folks ask us, “What do you do on the farm during the winter?”
The short answer? More than you might think.
Winter is our time to close out the year and prepare for the next one. That includes reviewing the past season, planning crop rotation (what to plant and where), and closing out yearly accounts while getting taxes ready.
Our strawberries don’t take the winter off either. They require constant attention—covers on, covers off—depending on temperatures and weather conditions to protect them all winter long.
Until New Year’s, we remain very busy:
• Direct store deliveries to 25–30 stores, three times a week
• Wholesale pickups at the farm almost daily
• Kinston Farmers Market twice a week (most weeks)
Our on-farm market is open daily except Sundays. We will be closed during January and February.
Once Thanksgiving hits, we operate with a much smaller staff as many of our seasonal crew head home.
Winter may slow the pace a bit—we joke that we go from 75–80 hour work weeks to a “normal” 40-hour week —but this season is when we plan like crazy for next year and pray we do a good job.
Thank you for supporting TC Smith Farms year-round.
Seraphim Smith
You must stop by to see Seraphim’s creative and delicious Yule Logs. A picture just doesn’t do them justice — seeing them in person is part of the magic. They make a stunning (and completely edible!) centerpiece for your dessert table.
Seraphim will also have cinnamon rolls, challah bread, plain loaves, bagels, and other breads. Everything is baked with care and full of flavor — and they go fast, so don’t wait.

Holy Granola
Holy Granola has sold out of their granola, but they do have jars of roasted peanuts from Swansboro United Methodist Church. They are just delicious and contain no cholesterol or trans fats.
They make a great little gift or stocking stuffer!
Julie Babbin and Kristy Kelly
You’ll find their well-known cranberry chutney, along with a selection of other homemade treats. They may also have homemade ice cream made with local fruits.
