Spicy chicken and grilled chicken in walk-in temped above 41F - shall be 41F or below;

Fly strip hung in walkway where raw chicken may pass through;

Test strips were not available to test sanitizer;

Spray can of stainless steel polish stored in contact with paper towels intended for use at hand-wash sink;

German cockroach found in paper towel dispenser beside hand-sink;

Cutting boards and pans beside hand-sink are in splash zone from hand washing;

Shelving that holds dishes above prep unit and some shelving that holds dishes underneath counter are dusty/have food residue;

Employee drinks left on counters and other prep surfaces;

Pork skins and raw oysters in walk-in refrigerator were stored so that the pork skins were coming into contact with new oysters;

Several plates and other dishes had visible food residue;

Approximately 20 racks of ribs cooked last night then individually wrapped in aluminum foil are packed in large pan in walk-in. Ribs in middle of the pan were 43F; ribs on outside of the pan were 41F - not cooled properly;

Carts with salad bar items were rolled out of walk-in to make room to store items from a delivery;

Ice buckets stored on the floor;

Wet wiping cloths left out around kitchen and prep areas - store in proper strength sanitizer when not in use;

Basket used to scoop shrimp in reach-in near grill stored in contact with the shrimp;

Upper inside of big ice machine, shelving, inside refrigeration units and tops of sides of equipment need additional cleaning;

Several cracked or damaged floor tiles in cook area;

Employee bookbags and coats stored on bread cart;
