Lenoir County restaurant inspections for June 19 through June 29

The following restaurant inspections were conducted by the Lenoir County Health Department:

Hwy 55

2405 Suite J/North Herritage Street, Kinston
Score: 85.5
Inspection date: 6/29
Obseravtions:
No certified food protection manager present;
Front hand sink does not have hot water;
Ice bin needs additional cleaning;
Food in prep unit beside flat top were above 45F - unit needs to be destroyed;
Thermometer was calibrated to 40F - shall be calibrated to 32F;
Live roach seen in back dish room and flies in kitchen;
No sanitizer in wiping cloth bucket;
Cover cups in dispenser to prevent contamination;
Gaskets on refrigeration units and freezer units throughout facility are in disrepair - repeat violation;
Outsides of equipment and insides of refrigeration/freezer units need additional cleaning - repeat violation;
Floor tiles in front of grill and around -3-compartment sink needs to be repaired/replaced;
Floors, walls and ceilings need additional cleaning - repeat violation;
Light guard above lemonade prep area is breaking - needs to be repaired;

Observations:
There must be a certified food protection manager on site all hours of operation;
Sandwich prep unit and salad bar not holding temperature to less than or equal to 45F;
Wiping cloths when stored need to be in proper strength sanitizer;
Inside of some refrigeration units, shelving and inside top of large ice machine need to be cleaned;
Some grout needed in kitchen floors;

Observations:
Employee was handling shredded cheese with bare hands;
Many flies in kitchen;
Employees prepping food without hats or hair net;
Dishes were stacked wet;
Shelving and bottom of reach-in coolers and freezers need additional cleaning - repeat violation;


Little J's Pizza

Observations:
All potentially hazardous ready-to-eat food held over 24 hours must be date marked;
Inside of refrigeration units need to be cleaned;
Dumpster needs a drain plug;
Floors and walls in some areas are not easily cleanable;


Chef and The Farmer

Observations:
Hand sinks in bar area and upstairs kitchen did not have hand towels;
Dishes, utensils and baffle in ice machine need additional cleaning;
Several flies in kitchen - need better fly control;
Food stored on the floor in walk-in freezer;
Dishes on rack beside hand sink are in splash zone from hand washing - dishes need to be stored in a clean/dry location - splashguard is not adequate - dirty dishes stored in an area designated for clean utensils - dirty utensils need to be stored in a separate location from clean - clean utensils bing as needed;
Rusty shelving and table legs need to be resurfaced to keep them smooth and easily cleanable - repeat violation;
Trash cans were not provided at hand sinks;


Golden China Buffet

Observations:
Floor cleaner in pump sprayer was not labeled;
Food stored on the floor in back walk-in and sugar bin and rice were uncovered in dry storage;
Broken walk-in freezer door in back and gasket on reach-in freezer door is tearing - repeat violation;
Outside of marinater, inside of dish machine doors, work area and ceiling vents need additional cleaning - repeat violation;
Cracked floor tiles and walls in disrepair - repeat violation;
Hood vents need additional cleaning;


King's

405 East New Bern Road, Kinston

Observations:
Raw chicken was being breaded on same table that cooked corn bread was on;
Several foods being pulled from cold storage and put in hot holding - when pulled from cold storage foods shall be reheated to 165F using approved methods before placing in hot holding;
Wet wiping cloths lying on tables - shall be kept on sanitizer between uses;
Tea jugs stored on floor;
Rusty shelving and rusty hinges need to be repaired to keep them smooth and easily cleanable - repeat;
Inside of refrigerator units, carts and shelving need additional cleaning;
Broken floor tiles and concrete bowing up in dish room - repeat violation;


Applebee's

4483 US 70 West, Kinston

Observations:
Some pans are not properly air drying - ponding on edges;
Shelving and inside of refrigeration units need to be cleaned;
Floor needs to be cleaned;
Floor needs grout in some areas;


Baron and The Beef

Inspection date: 6/27
Observations:
Meatballs in walk-in were 45-50F;
Meatballs were not cooled properly - use ice baths and or shallow pans to cool food;
Gasket on reach-in cooler is tearing and needs to be replaced - replace front guard on ice machine ASAP;
Vents, shelving and baked potato drawers need additional cleaning - repeat violation;
Hole in front of dumpster;
Baseboard is pulling off wall under sink next to dish machine;
Walls around dish machine and under sink next to it need additional cleaning;


Sabor Modern Latin Cuisine

108-A West North Street, Kinston

Observations:
Restaurant did not have health policy in place;
Dish machine was not sanitizing strong enough;
Middle creole sauce was 48F - potentially hazardous food shall be cooled from 135F to 70F in two hours and from 70F to 45F or less in 4 hours for a total of 6 hours;
Several flies and gnats in bar area;
Dishes were stacked wet;
Dispensing utensils stored in bin with food contact surface up - store inverted to prevent contamination;
Styrofoam coolers being reused for food storage;
Hand sinks/faucets need additional cleaning;
Beats and bangs on walls - keep walls in good repair;

Observations:
Dish machine was not sanitizing properly - sanitizer hose was cracked;
Oysters, tomatoes and cooked chicken in prep units were above 45F - ensure that all potentially hazardous food is at 45F - greens to be fried were left out on table;
Chip bin under prep table was left uncovered;
No trash cans provided at hand sinks;
