Sorry summertime squash, the health benefits of fall-harvest squashes such as the savory butternut squash far outweigh those of its’ summer cousins.  Of all the winter squashes, butternut squash is the easiest to work with; it has thin skin and can be easily peeled with a vegetable peeler. Its dense flesh and robust flavor work well in a variety of dishes, from sweet to savory.

It’s really sad that one of the most nutritious fall vegetables is often only used for decoration and often overlooked for a healthy addition to your menu!!  Besides being great for decorating, and the only vegetable that is carved and lit up, this low-calorie squash is rich in potassium and loaded with beta-carotene (a powerful antioxidant), and its natural sweetness brings flavor to baked goods without any added guilt.

I need your help in trying to make rational sense of the Democratic agenda. I’ve been asking the same questions for over two years, asking for someone on the Democratic side to come to my rescue.
