Dolly Day at the Farmers Market

Families are invited to Dolly Day at the Lenoir County Farmers Market from 10 a.m. to 2 p.m. Saturday, September 26, 2026. Free books from Dolly Parton's Imagination Library will be available, and families with children ages 0 to 5 can sign up on site.

There will also be storytime, arts and crafts, and music. All families are invited.

Bell Peppers, a Rainbow of Color

Bell peppers are in season from July through September and are plentiful at local farmers markets and roadside stands. They make a delicious addition to summer salads, pizzas, pasta dishes, kabobs, scrambled eggs, and stuffed pepper recipes.

Bell peppers are also a good source of vitamins and fiber. Red bell peppers contain approximately twice as much vitamin C as green peppers, so consider using both.

Recipe

Bell Pepper Enchiladas

Ingredients

  • 1 pound ground turkey, beef, or pork
  • 4 very large bell peppers, any color
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes, drained
  • 1/4 cup chicken stock
  • 1/4 cup salsa
  • 4 tablespoons shredded mozzarella cheese
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 to 1 teaspoon salt

Instructions

Preheat oven to 350 degrees. Hollow out the bell peppers, place them in an 8-by-8-inch baking dish, and bake for 15 to 20 minutes. Brown the meat in olive oil, then add black beans, tomatoes, seasonings, and chicken stock. Cook about three minutes.

Fill peppers with the meat mixture, pour salsa over and around them, and top with mozzarella. Cover with foil and bake for 30 to 40 minutes. Remove foil and broil until the cheese has browned edges. Avocado and cilantro make great toppings.

Unstuffed Bell Pepper Casserole with Ground Beef

Ingredients

  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 large green bell peppers, chopped
  • 1 14.5-ounce can diced tomatoes
  • 1 8-ounce can tomato sauce
  • 1/2 cup beef broth
  • 1/2 cup uncooked long-grain rice
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded mozzarella cheese

Instructions

Preheat oven to 350 degrees. Cook beef, garlic, and onion until beef is browned, about 10 minutes. Transfer to an 11-by-8-inch baking dish. Add peppers, tomatoes, tomato sauce, broth, rice, Worcestershire sauce, salt, and pepper.

Cover with foil and bake for 75 minutes, or until rice is tender. Sprinkle mozzarella on top and bake 10 more minutes. Serves four.

Rainbow Bell Pepper Salad

Ingredients

  • 4 multicolored bell peppers, thinly sliced
  • 1/2 small red onion, very thinly sliced
  • 1/3 cup extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1/4 cup fresh lemon juice
  • 2 garlic cloves, minced
  • 1/2 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground black pepper

Instructions

Place peppers and onion in a large bowl. Combine olive oil, mustard, lemon juice, garlic, salt, oregano, red pepper flakes, and black pepper in a jar. Cover tightly and shake well. Pour dressing over vegetables, toss, and refrigerate until ready to serve. Serves six.

Buffalo Chicken Stuffed Peppers

Ingredients

  • 12 mini sweet bell peppers
  • 8 ounces cream cheese, softened
  • 2 cups shredded cooked chicken
  • 1/2 cup Buffalo sauce
  • 1 cup shredded cheddar cheese, divided
  • 1 teaspoon garlic powder
  • Nonstick cooking spray

Instructions

Preheat oven to 400 degrees. Cut peppers in half and remove seeds and ribs. Mix cream cheese, chicken, Buffalo sauce, 1/2 cup cheese, and garlic powder. Place peppers cut-side up in a sprayed baking dish, fill with chicken mixture, cover with foil, and bake 20 minutes. Remove foil, top with remaining cheese, and bake five more minutes. Yields 24 pepper halves.
